Broccoli & Aïoli Soup
Broccoli & Aïoli Soup
Recipe serves 4 Ingredients: - 400-500 g broccoli
- 500 ml vegetable stock (1 big cube = 1/2 ltr)
- 2
small spring onions
- 3-4 big cloves of garlic
- Lemon juice
- Black pepper
- Salt
- Nutmeg
Method: - Cut the broccoli and stalk in small pieces
- Make the stock with 1 cube
and 1/2 ltr of water
- Boil the broccoli in the stock for 10-15 minutes until soft
- Puree in a processor with the finely chopped garlic and spring onions
- Pour the soup in a pan, add black pepper, a pinch of nutmeg and 1 teaspoon of
lemon juice. Add salt to taste.
- Bring the soup to a boil. If too chick, add 50 ml of water.
- Finally, add 1 tablespoon of light crême fraiche or single cream
